Bacon and Cheese Pastries

Ingredients
1 x 375g rolls of good quality butter puff pastry, thawed
1 egg, for egg wash
150g ricotta
Pinch nutmeg
4 rashers of bacon, chopped
100g gruyere or cheddar cheese, coarsely grated
Fresh parsley, finely chopped to garnish
Method
Preheat the oven to 190°C and line a baking tray with baking paper.
Using a 10 cm diameter cutter, cut out 12 circles of pastry. Using a 6 cm cutter, indent the pastry circles to form a round border. Arrange on the prepared tray.
Now spread a dollop of ricotta in the centre of 6 cm circle. Sprinkle with nutmeg, bacon and cheese.
Lightly brush the pastry border with the egg wash. Bake for about 25 - 30 minutes or until golden. Sprinkle with fresh parsley to garnish.
