Baked Beans

Ingredients

Thick cut sourdough toast

Fried eggs, to serve

Parsley and red onion salad to serve

Beans

1 tbsp olive oil

2 x 400g can cannellini beans, drained

1 chicken stock pot, dissolved in 500ml water

1 tbsp tomato paste

3 tbsp maple syrup

2 tsp mustard powder

2 splashes of Worcestershire sauce

2 bay leaves

Method

Heat oil in a pot over medium heat. Fry off the bay leaves and tomato paste before adding the beans, stock, maple syrup, mustard powder, Worcestershire sauce and cook uncovered, reducing by a third until thick and rich.

Serve with thick cut toast and a fried egg.
