Baked Gnocchi Sorrentina

Ingredients
500g traditional gnocchi
1 tin cherry tomatoes
2 garlic cloves, smashed
½ cup fresh basil
1 x buffalo mozzarella (or 6 bocconcini balls)
¼ cup parmesan
4 tbsp olive oil
Salt and pepper
Method
Preheat oven to 220°C.
Heat oil and garlic in a pan on medium heat. Cook for 2 minutes stirring occasionally.
Add tomatoes, a good pinch of salt. Bring to the boil and simmer for 5 minutes. If sauce reduces too much, add a ladle of pasta water.
In a pot of boiling salted water, add the pasta and cook as per packet directions.
Tear half the mozzarella into the pan.
Add basil, gnocchi and mix gently.
Finish with remaining mozzarella and sprinkle parmesan over the top.
Place the pan into the oven and cook for 8 minutes or until the cheese is melted and crispy on top.
