Balsamic Glazed Onion Tarts

Servings makes 6 small tarts
Ingredients
20g butter, softened
3 springs thymes, leaves picked
2 small white onion, cut into 1 cm rounds
2 tbs caramelised manuka balsamic dressing
2 x sheets of puff pastry, defrosted
4 buffalo bocconcini, torn to serve
Method
Preheat the oven to 190°C. Butter the base of a 6-hole Texas muffin tin.
Using a cookie cutter, cut 9 cm pastry rounds (or circles big enough to fit into the muffin tin).
Add the thyme to each hole and add an onion round to each hole. Drizzle with balsamic dressing. Cover with the pastry and place in the oven for 20-25 minutes until the pastry is golden.
Allow to cool slightly before twisting each tart and removing them from the muffin pan, flipping over.
Serve with torn bocconcini on each and a little extra balsamic dressing and extra thyme.
