Berry Ripe Beauty Bars
Cook Time 30 minutes plus freezing

Ingredients
2½ cups desiccated coconut
1-2 tbsp berry powder
⅓ cup full flavoured coconut oil, melted
⅓ cup rice syrup
1-2 tbsp collagen powder (optional)
200g dark chocolate (min 70%), melted
Method
Add desiccated coconut, berry powder, coconut oil, rice syrup and collagen powder to a mixing bowl. Mix well to combine. Mixture should stick together when you press it with your hands.
Line small baking tray with baking paper, add coconut mixture, press evenly into tray. Use a sharp knife to trace lines into mixture. Freeze.
When frozen, remove and snap into bars. Place onto cake rack and pour over melted chocolate. Allow chocolate to set.
Best stored in fridge or at room temp if not too hot. If taken straight out of fridge best to eat after 10-15 minutes to allow to soften slightly.
