Blueberry Nice Cream

Cook Time 10 minutes plus freezing

Servings makes 500ml full container

Ingredients

2 ripe bananas

2 punnets of blueberries, plus a few to serve

80g natural yoghurt

2 tbsp honey

Pinch cinnamon

Almond flakes, toasted, to serve

Method

Slice the bananas into rounds and place on a tray with 1½ punnets of blueberries. Freeze.

Place in a blender along with the remaining fresh berries, yoghurt, honey and cinnamon. Blend until smooth but firm like ice cream.

Serve immediately with toasted almond flakes and fresh blueberries or freeze in a container for later.
