Char Grilled Baby Octopus with White Bean Puree

Ingredients
500g baby octopus, cleaned and cut in half
2 clove garlic, minced
1 chilli, seeds removed and finely chopped
Zest of 1 lemon
3 tbs. of olive oil
Salt and pepper
White bean puree
1 can white beans, drained and rinsed
¼ extra virgin olive oil
Juice of 1 lemon
1 garlic clove, finely minced
½ bunch dill, leaves picked
Method
Place the cleaned baby octopus, garlic, chilli, lemon, oil and seasoning into a bowl and marinate for at least three hours or even better overnight.
For the bean puree, process all ingredients in a food processor until smooth. If too thick add a little warm water. Season to taste. This can be made a few days in advance. Warm up slightly just before serving.
The following day heat a barbeque or griddle pan to a high heat and chargrill the octopus for a few minutes on each side in batches. This will ensure that they’ll get a nice charred flavour.
To serve, spoon the white bean puree onto a platter, arrange the octopus on top followed by sprigs of dills. Finally dress with a little more oil and a squeeze of lemon juice. Serve immediately.
