Chicken Cafreal

Cook Time 1 hour plus marination time

Servings 4

Ingredients

4 chicken marylands, skin off

Potatoes, pan-fried, to serve

Marinade

100g fresh coriander, stalks removed

1 knob ginger

3-4 cloves garlic

7 small green chillies (use less chillies for more mild flavour)

2 tsp cumin seeds

1 stick cinnamon stick

½ tsp cloves

2 tsp black pepper

Good pinch salt

1 lime, juiced

2 small bay leaf

4 tbsp vegetable Oil

Method

Blend all the ingredients of marinade in a blender with little water into a smooth paste.

Coat the chicken with the prepared marinade and leave in the fridge for 2 hours or overnight.

Preheat the oven to 180°C.

In a pan over a medium to high heat, add some oil and once hot, place marinated chicken and cook to char slightly on both sides.

Place the chicken in an oven-safe tray, cover with foil and cook in the oven for 30 - 35 minutes or until the chicken is cooked through and tender.

Serve with pan-fried potatoes.
