Chilli Zucchini Spaghetti with Fried Eggs

Servings 4 as an entree
Ingredients
4 free range eggs
3 zucchini
Zest and juice of 1 lemon
1 chilli, finely chopped
1 clove garlic, finely sliced
3 tbs. olive oil
½ cup mint leaves
8 slices of Bresaola
Pecorino, shaved
Salt and pepper
Method
Combine the lemon, chilli, garlic and oil in a bowl. Season the dressing with salt and pepper.
Wash the zucchini and using a peeler, the zucchini into ribbons. Line the ribbons up and then slice lengthways. Place in a bowl with the mint and toss with the dressing.
Heat a drizzle of oil in a large pan non stick pan. Add the eggs and fry for 2 minutes and season with salt.
To serve place a few slices of Bresaola on a plate. Place a handful of zucchini salad on top. Add a fried egg. Thinly shave pecorino on top.
