Chocolate Budino

Prep Time 10 minutes + 4 hours setting time

Servings 6-8 depending on size of moulds

Ingredients

275ml milk

15g cornflour

40g light brown sugar

Pinch sea salt

50g 70% dark chocolate, chopped

20g unsalted butter

Some mango sauce with a touch of fresh thyme or chilli flakes, to serve

Rich chocolate pudding finished with some mango sauce and just a hint of chilli. A true chocolate delight.

Method

Mix a little milk with the cornflour to create a slurry. This will prevent lumps in your pudding.

Bring the milk, salt and sugar to the boil.

Add cornflour mixture and boil on medium heat for about 2 minutes or until mixture starts to thicken.

Take off the heat and mix in the butter and the chocolate.

Divide pudding into serving dishes or greased moulds.

Place in the fridge to set for 4 hours.

To serve, top with some mango puree with a touch of thyme or chilli flakes.
