Creamed Kalettes

Ingredients

160g kalettes

1 shallot, finely chopped

1 garlic clove,finely chopped

Extra virgin olive oil

Pinch nutmeg

1 tsp Dijon mustard

200ml cream

Salt & pepper

Method

Blend the kalettes in a food processor until they are finely chopped. 

Heat pan over a medium heat, add oil, shallots and garlic and cook until softened.  Then add the chopped kalettes, stirring regularly, for 4-5 minutes. Now add the cream, mustard, pinch of salt and pepper, nutmeg and cook on a low heat for 4-5 minutes until thick and rich.
