Servings makes 12 cupcakes

Ingredients

2 cups self-raising flour

1 tsp baking powder

1 cup caster sugar

80g butter, melted

2 eggs

¾ cup buttermilk 

½ cup vegetable oil 

1 tsp vanilla extract 

Pinch of salt

Frosting

1 ½ cups icing sugar, sifted

250g cream cheese, cold

Hundreds & thousands, to garnish

Method

Preheat oven to 180°C. Line a cupcake tin with patty pans.

For the batter, combine the oil, melted butter, buttermilk, and vanilla in one bowl. In a separate bowl, whisk together the flour, baking powder, sugar, and salt. Create a well in the centre, crack in the egg, and gradually whisk in the wet ingredients until fully incorporated.

Divide the batter evenly between 12 patty pans and bake for 25-30 minutes.

Place cream cheese and icing sugar into a blender and mix until smooth. Place into a piping bag. Pipe icing on cupcakes and garnish with hundreds & thousands.
