Fillet of Beef with Green Curry Butter

Cook Time 15 minutes plus chilling time

Ingredients

1 tsp extra virgin olive oil

4 x 200g fillet of beef steaks, each tied with string and brought to room temperature

1 tbsp Thai green curry paste 

250g block of salted butter, softened 

Coriander, dill and Thai basil, to garnish (optional)

Salt 

Method

Heat a frypan over a medium-heat. Oil the beef and season with salt. 

Place the beef in the pan and sear the meat on all sides. Cook to your liking and rest for half of the cooking time.

Mix the butter and green curry paste together well in a bowl. Top the rested beef with a quinelle of the mixture and serve with herbs and sides of your choice.
