Kataifi Prawns

Ingredients
10 large green prawns, peeled, deveined and tail intact
180g packet of kataifi
125g butter, melted
1 cup sweet chilli sauce
Juice and zest of 1 lime
Pinch chilli powder
¾ cup whole egg mayonnaise
Method
Pre-heat the oven to 180C.
Generously brush or dip the prawns into the sweet chilli sauce.
Pull the kataifi apart with your hands and lay out strips on a clean board. Drizzle generously with the butter and then wrap the kataifi tightly around the prawn. Place a wire rack on a tray and bake in the oven for 15 minutes.
For the sauce, combine the lime, chilli and mayonnaise. Serve sauce with the crispy prawn kataifi.
