Pork & Bean Sprout Stir Fry

Ingredients

1 tbsp peanut oil 

1 x 3 cm piece ginger, julienned

200g bean sprouts 

1 small bunch garlic chives, cut into 3 cm batons 

1 tbsp sesame oil 

1 tbsp soy sauce

Pinch white pepper 

250g pork scotch fillet, thinly sliced and then cut into strips

1 tsp Shaoxing wine

1 tsp oyster sauce

½ tsp bicarbonate soda

1 tsp corn flour 

Rice, to serve

Method

Combine the pork with the wine, oyster sauce, bicarbonate soda and corn flour. Combine well and marinate for 10-20 minutes.

Heat peanut oil in a wok over a high heat. In batches add the pork and fry for 3-5 seconds to seal and then remove.

Add the ginger and stir fry for 10 seconds then add the garlic chives and return the pork along with bean sprouts, sesame oil, soy and white pepper. Toss and fry everything together to coat well in the sauce.

Serves with rice.
