Portuguese Green Olive Dip with Crudites

Ingredients

Cherry tomatoes 

Cucumber

Beans 

Zucchini

Dip

1 large handful of leafy greens of your choice, such as kale and herbs, chopped

2 spring onions, chopped 

150g of pitted green olives 

2 tbsp smoked almonds 

2 anchovies

3 tbsp cream cheese, softened 

1 tsp sherry vinegar 

1 tbsp extra virgin olive oil 

Salt and pepper

Method

Combine the leafy greens, spring onions, olives, almonds and anchovies into a food processor and blitz to finely chop. Alternatively chop together with a knife. Fold through the cream cheese, vinegar and oil and season with salt and pepper.

Serve in a bowl with vegetable crudites on the side.
