Prawns in Spicy Green Sauce

Ingredients

2 tbsp olive oil 

15g butter

1kg green prawns, shelled and deveined and tails still intact 

Juice 1 lime

Sour cream or yoghurt, to garnish

Salt and pepper

Jasmine rice to serve

Green Sauce 

¼ cup cashew nuts, soaked in ¾ cup of water for 1 hour 

1 bunch coriander, plus extra to garnish 

1 bunch parsley

2 jalapeno chillies, seeds removed 

4 spring onions

2 cloves garlic

1 x 2 cm piece of ginger, peeled and chopped

Method

In a blender add all the ingredients with a pinch of salt, 2 tablespoons of the oil, and ¼ cup of water. Blend until smooth.

Heat the remaining oil and butter in a pan on a medium-high heat. Add the prawns and fry for 1 minute on each side. Add the sauce and turn to low. Swirl the pan to ensure all of the prawns are coated in the sauce. Now add the lime juice and check the seasoning again.

Serve with a drizzle of sour cream, rice and extra coriander.
