Rotisserie Pineapple

Ingredients

1 ripe pineapple, peeled 

¼ cup brown sugar

¼ cup honey

Pinch cinnamon 

1 tsp vanilla bean paste

Zest of ½ lime

Crème Fraiche or ice cream, to serve

Method

For the basting syrup, add the sugar, honey, cinnamon and vanilla to a small pot and bring to a boil.

Baste pineapple with half of the syrup.

Skewer the pineapple onto the oven rotisserie rod, securing it with the prongs on each side, then place in the oven with a tray filled halfway with water for any drips. Remove the plastic handle and close the oven door.

Cook on the rotisserie function at 220C for 25-35 minutes, until golden brown, basting halfway through with some extra syrup.  

Cool pineapple slightly, then slice into quarters. Serve with a little lime zest, crème fraiche or ice cream and extra syrup.
