Salmon & Avocado Cocktail

Ingredients

200g fillets of sashimi grade salmon, finely diced

1 tbsp baby capers

1 french shallot, finely chopped

1 small ripe avocado, diced small

¼ iceberg lettuce, shredded

2 sprigs dill, finely chopped, plus extra for garnish

Dressing

¼ cup crème fraîche

Tabasco, to taste

Zest ½ lemon, remaining lemon cut into wedges for garnish

Salt and pepper

Method

Combine the dressing ingredients together in a bowl and season with salt and pepper.

Add the salmon, capers, shallots and dill in a bowl. Add the dressing season and gently fold together. Now add avocado and gently fold again.

Arrange the shredded lettuce into martini glasses and top with the salmon mixture.

Garnish with dill and a wedge of lemon.
