Seasoned Crusted Salmon

Ingredients
1 cup Panko bread crumbs
1 tsp stock powder
50g unsalted butter, softened
2 x 150g skinless salmon fillets
Method
Preheat the oven to 210°C fan forced with top heating.
Add the stock powder and butter to the panko crumbs, mix well to form a biscuit-like consistency.
Place one tablespoon of the crust mixture onto a sheet of baking paper and place another on top. Press to form into a rectangle shape. Lay on to the fish.
Bake the salmon in the oven for 10 - 15 minutes or until the crust is golden and the fish just cooked through.
Serve with wilted spinach.
