Spiced Chicken with Coconut Rice

Ingredients

1 tsp olive oil

6 chicken drumsticks

1 tsp Chinese 5 spice

Salt

Salsa

1 cob of corn, steamed and kernels cut off

1 handful of coriander leaves

1 long red chilli, thinly sliced on an angle

Juice 1 lemon

Rice

1 cup jasmine rice, washed three times

¾ cup light coconut milk

Pinch salt

Method

For the rice place rice, coconut milk, salt and 3/4 cup of water into a pot that fits the air fryer. Set to steam mode and Steam for 15 minutes or until rice has absorbed all of the liquid. Remove and cover with foil to keep warm.

Combine chicken with oil, 5 spice and a good pinch of salt. Arrange in air fryer basket and cook on the chicken function for 20 - 25 minutes.

For the quick salad, toss everything together with a good pinch of salt.

Serve coconut rice with spiced chicken drumsticks and salad.
