Spicy Mango and Tequila Sorbet

Ingredients

250g frozen mango chunks

80ml tequila

Mint, to garnish

Spicy Sugar Syrup

½ cup caster sugar

Pinch of chilli powder (or to taste)

1 tsp vanilla bean paste

Zest and juice of 1 lime

Method

Place the sugar syrup ingredients into a small pot along with 1/2 cup of water and bring to a boil. Boil for a minute then remove off the heat and chill in the fridge.

Place the mango chunks and tequila into a food processor and blend until smooth.

Use an ice cream scoop to serve sorbet in glasses. Drizzle over chilled spiced sugar syrup and garnish with mint.
