Sri Lankan Carrot Sambol

Ingredients

2 large carrots, cut to julienned

½ large onion, thinly sliced 

1 medium tomato, diced

4 green chilli, thinly sliced

⅔ cup grated coconut/re-hydrated desiccated coconut 

Salt, to taste 

1 tsp chilli flakes

½ lime, juiced 

Method

Re-hydrate desiccated coconut by microwaving for 30 seconds with 2 tbsp water or coconut milk.

Combine the carrot, onions, tomato, green chilli, coconut, salt, chilli flakes and lime well using your hands and serve fresh immediately.
