Sweet Potato and Chorizo Bites

Ingredients
1 large sweet potato, cut into 3cm rounds
1 tsp extra virgin olive oil
2 chorizos, cut into 3cm rounds
Mayonnaise, to serve
Chervil, to garnish
Salt & pepper
Method
Preheat the oven to 180C and line a tray with baking paper.
Using a 3cm wide cookie cutter, cut out sweet potato cylinders. Brush with oil and season with salt and pepper. Bake in the oven for 10-15 minutes or until just tender. Place a piece of chorizo on top of the sweet potato and bake for a further 5-8 minutes. Dollop mayonnaise on top and garnish with chervil.
