Sweet & Smoky Pulled Beef Baked Sweet Potato

Ingredients

500g chuck steak, whole

Salt and pepper

1 can Dr Pepper or Cola

1 cup smokey BBQ sauce

4 small sweet potatoes

¼ cup olive oil

100g unsalted butter, softened

2 cups cacio pepper cheese, grated

½ cup sour cream

¼ chives, finely chopped

¼ cup pickled jalapenos, chopped

Method

Preheat the oven to 160°C.

Heat a casserole dish over high heat. Season steak with salt and drizzle with olive oil on both sides. Brown the steak for a couple of minutes on each side. Turn down the heat to medium. Add the Dr Pepper and smokey BBQ sauce and a good pinch of pepper. Stir and bring to a simmer. Place in the oven and cook, covered, for 3 hours or until the beef is falling apart. Pull beef with two forks and mix into the sauce.

Half way through the beef cooking, prick each sweet potato a few times with a fork, drizzle each with olive oil and season with salt and pepper. Wrap individually in foil and place onto a baking tray. Cook in the oven for 1.5 hours or until potatoes are soft.

To serve, unwrap potatoes and place onto a serving plate. Slice the potato crossways to open, spread with butter, sprinkle evenly with the cheese, top with pulled beef, add a big dollop of sour cream and garnish with chopped chives and pickled jalapenos.
