Vanilla and Lemon Cordial

Cook Time 10 minutes plus steeping for 1 hour

Servings makes about 750ml

Ingredients

1 cup of sugar

2 tsp vanilla extract with seeds

4 stalks of lemon verbena (optional)

Juice and zest 3 lemons 

1 tsp tartaric acid

Method

Place the sugar, vanilla and 3 cups of water into a pot and bring to a boil. Stir regularly until the sugar has dissolved. Now add the lemon zest, juice, lemon verbena if using, and tartaric acid. Mix in and turn the heat off. Steep for an hour.  

Mix 1-2 tablespoons of cordial with sparkling or still water or use as a base for a cocktail. Stored in a sterilised bottle in the fridge for a few weeks.
