Watermelon, Tomato and Mozzarella Salad

Ingredients

1 cup watermelon, roughly cut into cubes

3 large ripe heirloom tomatoes, roughly cut into wedges

1 x 125g buffalo mozzarella, sliced

1 tbsp white balsamic

2 tbsp olive oil

Basil, to serve

Salt and pepper, to taste

Crusty bread, to serve

Method

Arrange watermelon, tomato on an oval platter and season with salt and vinegar. Add slices of mozzarella and basil and season again with a hint of salt and pepper.

Drizzle over olive oil and serve with crusty bread.
