Burnt and Baked Cabbage

Cook Time 35 minutes

Servings 4 as a side

Ingredients

1 wedge white cabbage (make sure fresh and tightly packed)

Extra virgin olive oil

½ cup soy

¼ cup rice vinegar 

¼ cup mixed chopped parsley, dill and chives

Wedge of parmesan

Method

Preheat the oven to 220°C. 

Brush the cabbage in extra virgin olive oil (approx 3-4 tablespoons) then char on a BBQ on a grill pan on the stove. 

Place in the oven and cook for 25-35 minutes or until softened and a skewer can be placed through it.

Once cooked, lightly chop, drizzle olive oil, the soy and rice vinegar and let sit for 10 minutes. 

Place on a serving dish, sprinkle with fresh herbs and grate heaps of parmesan over.
