Pork Pad Gra Pao

Ingredients

1 cup Thai jasmine rice, rinsed at least 3 times 

1 tbsp vegetable oil 

500g pork mince

2 purple shallots, finely sliced

2 clove garlic, sliced

200g green beans, cut into 2 cm batons

1 tbsp fish sauce 

2 tbsp soy sauce 

1 tbsp caster sugar  

6 sprigs Thai basil, leaves picked, plus extra to serve  

2 fried eggs, to serve

Lime, to serve 

Crispy chilli oil (or any chilli condiment of your choice)

Method

Cook the rice as per packet instructions. 

Heat oil in a wok over a high heat and add the pork mince for 5 - 8 minutes tossing occasionally, until crisp. Add the shallots, garlic and beans and cook for a further minute before adding the fish sauce, soy sauce and sugar. 

Serve rice with pad gra pao, fried egg, chilli, basil leaves and lime.
