Chocolate Almond Torte

Ingredients
200g unblanched whole almonds
250g seedless dates
250g dark chocolate nibs or a block broken into pieces
6 egg whites
Pinch of salt
125g caster sugar
Dollop cream and raspberries, to serve
Method
Preheat the oven to 180°C.
Place almonds, dates and chocolate in a food processor and blitz into tiny pieces.
Beat egg whites with salt until they form stiff peaks, gradually add the sugar and beat until shiny and the mixture resembles meringue. Fold in almonds, chocolate and dates.
Line a spring form tin 23 cm with butter and parchment. Place in the oven for 45 minutes. Allow the torte to cool in the pan in the turned-off oven with the door open. Turn out onto a platter and serve with cream and berries.
