Lunchbox Sushi Omelette

Ingredients

6 eggs, whisked

2 tsp olive oil

1 small onion, finely chopped

2 large handfuls of baby spinach

¾ cup grated cheddar 

8 slices of ham

Method

Heat 1 teaspoon oil in a large pan over a medium heat. Add the onion and cook for 3-4 minutes to soften. Add the spinach and wilt for a minute. Season if desired. Remove from the pan.

Heat the remaining oil in the pan and add 1/4 of the egg mixture. Swirl the pan to get as thin as possible (like a crepe) and add the cheese. Slide out of the pan and repeat the process two more times with the remaining egg mixture.

Add a thin layer of spinach mixture and then cover with a layer of ham. Roll up. Trim the end and then cut in half and in half again. To make them in to smaller sushi, cut again.
