Potato Gems

Ingredients
1kg potatoes
1 tbsp flour
1 tsp garlic powder
1 tsp onion powder
Salt
Vegetable oil, for deep frying
Method
Place the unpeeled potatoes into a pot of water bring to the boil and cook for 8-10 to parboil. Strain in a colander and cool for 10 minutes.
Using a box grater, grate the potatoes including skin. Place into a bowl with the flour, garlic and onion powder and a good pinch of salt. Mix everything together.
Using your hands and spoon, form into potato gems and place on a tray.
Heat oil to 180°C. Fry gems in batches until golden brown.
