Vanilla Semolina Pots with Roasted Plums

Ingredients

1L milk

75g sugar 

1½ tsp vanilla bean paste

100g fine semolina

1 egg yolk

Roasted Plums 

4 plums

3 tbsp caster sugar 

Zest of 1 lemon 

1 vanilla bean, seeds scraped

1 sprig of rosemary, leaves chopped

Method

Bring the milk, sugar and vanilla seeds to the boil. 

Rain-in the semolina and whisk until it thickens and bubbles. Remove off the heat and whisk in the egg yolk. Divide mixture into small glasses or bowls of your choice. Cover with cling film and chill completely.

Preheat the oven to 190°C and line a tray with baking paper. With your hands mix together the sugar, zest, vanilla and rosemary. Sprinkle over the baking paper and place the plums cut side down on to flavoured sugar. Roast in the oven for 20-25 minutes or until they just start to collapse and caramelise.

Spoon plums over the semolina pots and serve.
